Highland cattle are known as the hairy coo's with the big horns. They are photogenetic, cute and their calves, well we all know about those wee teddy bears!  But why we ended up with Highlands is more than just how they look. 

They are relatively easy to care for. Great temperaments (although some have better days than others - here's looking at you Fiona!) They don't require a big enclosed barn for Canadian winters. And their favourite places are in the woods, eating leaves and undergrowth. 

With their thick coat of hair, they don’t have as much excess back fat as other cattle. Resulting in more marbling and less cholesterol than chicken. 

Our Highland fold are all grass fed and finished. The only deviation from this are the occasional treats and load of pumpkins we receive after Halloween!

Our beef is all dry aged a minimum of 21 days to maximize flavour and tenderness.
